Broccoli and feta cheese bake

This recipe is adapted from the lovely Laura Thomas‘s awesome breakfast bake.

  • 1 courgette
  • 2 carrots
  • 4 eggs, 4 egg whites
  • 200g feta
  • 350g-ish broccoli (one head)
  • 2 tsp sage
  • 2 tsp paprika
  • ½ tsp cayenne pepper
  • 1 tsp turmeric
  • Salt & pepper to taste

Instructions:

  1. Pre-heat the oven to 180C and grease a large rectangular casserole dish
  2. Chop up the head of broccoli and steam (minus the stalks)
  3. Whizz up everything in a food processor, apart from the broccoli and feta cheese
  4. Stir in the broccoli and feta cheese
  5. Pour mixture into the greased dish and season with extra pepper
  6. Cook in the oven for 50 minutes or until firm and golden on the top
  7. When the bake is cool, I portion it up and freeze for a quick and easy nutritious meal
