Vegetable gratin

After a long day out today watching Healthy One playing rugby (hooray the team won!), I was famished when we got home.


I wanted something warming and filling and came up with this super-easy gratin.

It literally took minutes to prepare and was ready to eat after about 20 minutes in the oven.


  • 150g potatoes
  • half a courgette
  • 1 small parsnip
  • 1 Knorr vegetable stock cube


  1. Thinly slice the vegetables (peeling the parsnip first), and layer randomly in a casserole dish, seasoning as you go.
  2. Make up half a pint of stock using the stock cube and pour over the layers, then stick in the oven until beautifully brown!
